Moradabadi chicken yakhni biryani
Moradabadi biryani is very popular in Uttar Pradesh. In this
recipe first chicken and whole spices are boiled in water with some salt and in
the same yakhni water biryani rice is prepare. This recipe is very simple and
tasty and very light for the tummy. Moradabadi yakhni chicken biryani is a good
option when you want to cook something different and fast. the flavourful
ingredients are the key to the amazing taste which is liked by people of all

Ingredients
- Basmati rice- 700 gram (3 glass) (washed and soaked in water for 1 hour)
- For the yakhni masala:
- Onion sliced- 1 big size
- Garlic- 22-25 cloves
- Fennel seeds- 2 tblsp
- Coriander seeds-2 tblsp
- Black cardamom-2 pcs
- Green cardamom- 3 pcs
- Bay leaf- 2-3 pcs
- Whole black pepper- 20-25 pcs
- Clove-9 pcs
- Cinnamon stick- 2 inch
- Mace- small pc
- Chicken-1 kg
- Water- 1 ltr. (4 glass)
- Salt- 1 tsp (adjust as taste)
- For fry and making biryani:
- Oil- 3 tblsp (adjust as required)
- Onion slice- 2 medium size
- Shahi jeera- 2 tsp
- Bay leaf- 2-3 pcs
- Black cardamom-2 pcs
- Green cardamom- 3 pcs
- Clove- 6-7 pcs
- Whole black papper- 15-20 pcs
- Cinnamon stick- 2-3 small pcs
- Mace- small pcs
- Green chili- 6-7 pcs (adjust as required)
- Tomato slice- 1 big size
- Curd- 1 cup
- Pickle- chili or mix pickle
- Salt to taste
Method
- Take the pressure cooker add slice onion, garlic cloves, coriander seeds, fennel seeds, green cardamom, black cardamom, cloves, bay leaf, whole black papper, cinnamon stick, mace and add 1 ltr. water. Heat in high flame it till 3-4 whistles.
- Then open it and add chicken pieces in water allow it to boil.
- Now take out chicken pieces in the plate or bowl and keep it aside.
- Crush all the masala and take out the water (yakhni) by using drainer and keep it aside.
- Method of making biryani
- Take the pressure cooker on a medium flame add 3 tblsp oil.
- Fry onion till turns golden brown. (half golden brown onion take it aside)
- now add shahi jeera and sauté for 2 sec.
- Add whole garam masala like cloves, green cardamom, black cardamom, bay leaf, black papper and mace again sauté for 2 min.
- Now add chicken and ginger-garlic paste and mix well now sauté for 5 min.
- Add slice tomato, green chillies, salt and curd cook it for 5 min in medium flame.
- Add yakhni water, soaked rice and pickle, mix well. Covered the lid of pressure cooker and cook on high flame till 2 whistles comes.
- Take small bowl add 1 tsp keora water,2 small drop meetha attar and little amount of orange food color and mix, open the pressure cooker lid and add color after that rest of the brown onion and covered it and cook it on low flame for 2 mins.
- Serve hot with green mint and curd mix chutney.
How to make step by step moradabadi yakhni chicken biryani:
- Clean rice with fresh water and soak in 1 hour.
- Take pressure cooker to this add 1 ltr. Water and take
all the ingredients like fennel, cinnamon stick, green cardamom, black
cardamom, whole black pepper, cloves, bay leaf, garlic cloves and sliced onion.
Cover the lid of a pressure cooker and cook on high flame till 3 or 4 whistles
comes.
- Wait for sometimes till all the pressure is released. Open the lid and add chicken and cook on medium flame for allow it to boil.
- Now separate the chicken pieces from the water (yakhni).
- Crush all the masala and take out the water (yakhni) by
using drainer and keep it aside and discard all remaining crushed masala.
- Preparing for biryani- Take 5 litre cooker and heat the cooker on a medium high flame add oil.
- Add sliced onion, fry till onion turns golden brown.
- Half golden brown onion take it aside.
- Add shahi jeera sauté for a second. Now add whole garam
masala like bay leaf, green cardamom, black cardamom, cloves, mace, cinnamom stick,
black pappers fry for 30 seconds.
- Add in boiled chicken and any fry for 2 or 3 mins. then
add ginger-garlic paste and sauté 4 or 5 mins.
- Add sliced tomato, green chillies, curd and salt to taste
(or 1 tsp) fry till tomato turn soft.
- Add in yakhni water (aprox 1 ltr.).
- Add in soaked rice and add 2 tsp pickle.
- Covered the lid of pressure cooker and cook on high flame till 2 whistles comes. Switch off the flame and wait till all the pressure is gone.
- Take small bowl add 1 tsp keora water,2 small drop meetha
attar and little amount of orange food color and mix, open the pressure cooker
lid and add color after that rest of the brown onion and covered it and cook it
on low flame for 2 mins.
- Now your yummy moradabadi yakhni chicken biryani is ready
to be serve hot with curd and coriander chutney.
