Baigan bharta mashed eggplants is a dish from the Indian subcontinent that originated in the Punjab region. It is a vegetarian dish that is cooked mashed eggplant is then mixed with cooked chopped tomato, onion, garlic, cumin seeds and oil. It’s enjoyed with rotis or paratha!

Ingredients
·         Brinjal/ eggplants (Baingan)
·         12-13 garlic cloves
·         2 Onion sliced cut
·         2  tomatoes, diced
·         2-3 Green Chilies
·         2 tbsp oil
·         1 tsp Cumin seeds (Jeera)
·         Fresh Coriander chopped
·         Salt as per taste

Method
1.   Wash  brinjal (eggplants or baigan) , now  take the brinjals and add garlic clove to each side.
2.   Now put the brinjals in  pressure cook with 1/2 cup of water on high heat for 2  whistle. Release the pressure and strain the water.
3.   In hot oil, add Cumin.When it crackles, add onions and cook till they are light brown.
4.   Add tomatoes and Green chilies and cook till tomatoes turn soft and mushy.
5.   Add peeled, mashy Brinjal/ Baingan stir well for few minutes till everything mixes well until the oil leaves.
6.   Serve with chopped coriander leaves.

Prepration for baigan bharta
1.   Take the brinjals and add garlic clove to each side.


2.    Now put the brinjals in  pressure cook with 1/2 cup of water on high heat for 2  whistle.     Release the pressure and strain the water.




3.    Take a pan on medium flame add 1 or 2 tbsp oil  and add cumin seeds and  let them crackle.

4.    Add onions and cook till pink and translucent.


5.    Add tomatoes and Green chilies.


6.   Cook till tomatoes get soft and mushy.

7.    Add salt and stir for few minutes.
8.    Add peeled and chopped brinjals (Eggplant).


9.      Mix well with the onion tomato mixture.


10.    Garnished with fresh chopped green coriander.

11.    Serve with dal, roti or phulka and paratha.

tips
While buying the baingan for bhartha, go for the ones which are light. A heavy brinjal indicates that there are ripe seeds in it and this may spoil the taste of the bhartha.
