Ingredients
  • Turai/ Tori (ridge gourd) - 500 gms
  • Red chilli powder (Lal mirch powder) - 3/4 teaspoon
  • Turmeric powder( Haldi powder) - 1/2 teaspoon
  • Coriander powder (Dhania powder) - 1 teaspoon
  • Dry Mango powder (Amchoor powder) - 1/2 teaspoon
  • Cumin seeds (Jeera) - 1/2 teaspoon
  • Asafoetida  (Heeng) - a pinch
  • Oil - 1/2 tablespoon
  • Salt as per taste

How to preparation
1.  Peel turai (ridge gourd) to remove the green skin part. Check for worms if any. Make slit.
2.  Heat oil and add tadka of asafoetida and cumin seeds. Now add the slit turai to it. Stir fry.
3.  Add salt and turmeric powder and cook on low flame with lid covered. After 4-5 minutes when the turai turns tender, add coriander powder, red chili powder and dry mango powder too. Mix all.
4.  Sprinkle little water on it. Cook for 2-3 minutes till the oil leaves the sides. This indicates that your curry is ready.
5.  Delicious and healthy 'Masala Turai' is ready to be served with hot chapatis.
