 Stuff  ladyfinger ( Okra , Bhindi, or Bharwan bhindi) is stir fried okra (ladies's finger) that is slit and stuffed with spice mix such as garam masala and other locally available ground spices. Not to be confused with batter-fried okra which involves deep frying, this dish is just stir fried or sautéed lightly. It can be served as a side dish in accompaniment with steamed rice and dal or with chapati as a form of sabzi.

Bharwa bhindi is lady’s fingers stuff with a tangy and spicy masala mix.this dish is an Indian favourite and can be made at home using basic ground spices.

Ingredients
·         500 grams ladyfingers (bhindi)
·         2 tblsp coriander powder
·          1 tsp cumin powder
·          ½ tsp dried mango powder (amchur powder)
·          ¼ tsp turmeric powder
·          1 tsp red chili powder
·          1tsp chaat masala
·          A pinch of asafetida (hing)
·          3 tblsp oil
·          4-5 green chillies
·          1 tsp cumin seeds
·          1 tsp finely chopped garlic
·          1-2 medium onion (dice cuts)
·          1tblsp chopped fresh coriander leaves
·          Salt to taste  

How to make bharwa bhindi
1.     Wash the bhindi and wipe them dry with a clan kitchen towel.  Trim head and the thin bottom part of ladyfingers and make a slit in the middle of each, leaving a quarter inch at either ends.


2.   Combine coriander powder, dried mango powder, cumin powder, turmeric powder, red chili powder, salt, chaat masala and asafetida in a bowl.mix well.



4.     Stuff the dry masala mixture in the slit made in bhindi.



5.     Stuff all the bhindies in the same manner.


6.     Heat 2 tblsp oil in a pan/kadhai.


7.     Add cumin seeds and green chillies in the pan and sauté for a minute.



8.     Add chopped garlic and ginger paste, mix well and sauté till garlic is well browned.



9.     Reduce heat and add dice cuts onion, mix well and sauté few minutes.


10.   Add stuffed ladyfingers, add remaining oil. Now add the left over spice mixture. Mix well, Cover and cook, keep turning the bhindi after every 4-5 min. until they are done. 




11.  Serve hot with dal and rice!
