Aloo ki sabzi is an easy one pot meal made with aloo. Stir roughly cut boil potatoes along with the other dry spices including salt. it's a fantastic meal at any time of the day but I'm particularly fond of it for breakfast and lunch.This simple curry recipe goes really well along with poori.

    Ingredients


  • Oil- 1 tbsp
  • Cumin seeds- 1 tsp
  • Green chili- 2-3 chopped
  • Red chili powder- 1 tsp
  • Turmeric powder- 1 tsp
  • Coriander powder- 1 tsp
  • Salt to taste
  • Tomato- 3-4 medium finely chopped
  • Potato- 4 boiled & roughly cut
  • Fresh coriander leaves finely chopped

Method


  1. Heat oil in a pan or kadhai, add cumin seeds and let them splutter.
  2. Add green chillies and cook for a minute.
  3. add tomatoes, mix well.
  4. Add red chili powder, turmeric powder, mango powder, coriander powder and salt, mix well and cook until soften tomatoes or leaves oil.
  5. Add potatoes, cook for 3-4  minutes.
  6. Add water as required to make gravy.
  7. Cook for another 5 minutes.
  8. Garnished with chopped coriander.
  9. Serve with hot poori !!!

How to make potato masala for poori

  1.  In a pressure cooker, add 2 glass of water and potatoes then boil potatoes for 2-3 whistles. Remove from heat and let the steam escape on its own before opening the cooker.

  2. Drain the water and take out the potatoes and peel the potato and roughly cut.

  3. Now take a pan or kadhai on a medium flame and add 1 tbsp oil.
  4. Add cumin seeds and green chili sauté for 1 min.

  5. Add tomatoes, mix well.

  6. Add all spices like turmeric powder, coriander powder, mango powder and salt then sauté or cook until softens tomatoes or leaves oil .


  7. Now add the potatoes toss to coat them well in the spices.
  8. Add water as required to make gravy.cook for another 5 mins.
  9. Since the potatoes are already boiled, it doesn’t take long them to cook.
  10. Remove in a bowl and garnish with fresh coriander leaves. 
  11. Serve with hot poor !!!!
