Restaurant style paneer gravy recipe

paneer masala gravy

Ingredients:
- Paneer- 200 grams
- Salt- ½ tsp
- Deggi mirch powder- ½ tsp
- Garam masala- ½ tsp
- Turmeric powder- ¼ tsp
- Water- 1 ½ tbsp
- Oil- 1 tbsp
- For gravy:
- Onion- 3 medium size finely chopped
- Tomato- 3 medium size chopped
- Oil- 4 tbsp
- Pinch of asafetida
- Cumin seed- 1 tsp
- Bay leaf- 1 pc
- Whole red chili- 2 pcs
- Cinnamon stick- 2 pcs
- Cloves- 4-5 pcs
- Green cardamom- 1 pc
- Ginger-garlic paste- 1 tsp
- Gram flour- 1 ½ tbsp
- Turmeric powder- 1 tsp
- Deggi mirch powder- 1 tsp
- Coriander powder- 1 tsp
- Garam masala- 1 tsp
- Cashew nuts- 4 pcs
- Resins- 6-7 pcs
- Poppy seeds- 1 tsp
- Salt to taste
- Water- 1 ½ cup (as required)
Method
Cook the paneer
- Firstly add ½ tsp red chili powder, ¼ tsp turmeric powder, ½ tsp deggi mirch powder, 1 ½ tbsp water and 1 tbsp oil to a bowl.
- Mix well and add paneer cubes & marinate to 10 minutes.
- After marination, heat wide pan on low flame, place the paneer cubes in pan.
- Flip them to the other side and cook on a low flame. this take only 1 minute to each side. Then remove from pan and keep aside.
Make the curry paste
- Add cashew nuts, resins, poppy seeds and ¼ cup water make a smooth paste and keep aside.
- Making the curry
- Heat oil in a non stick pan, add cumin seed, asafetida, bay leaf, cloves, cinnamon stick, whole red chili and green cardamom, sauté for a minute. (medium flame)
- Add chopped onion, 1 tsp ginger-garlic paste and saute until it turns golden brown.
- Add turmeric powder, garam masala, deggi mirch powder, coriander powder and gram flour and sauté for another minute.
- Add chopped tomato and salt then mix it to. lower the flame, cover the pan and let this cook for 3-4 mins. (sauté every min.)
- Once the curry paste is cooked, add paneer mix well.
- Further, add 1 ½ cup of water mix everthing adjusting consistency as required.
- Finally add cashew nuts paste and mix properly.
- Let this simmer on medium heat for 4-5 minutes and then turn off the heat.
- Transfer to serving bowl and decorate with fried cashew nuts.
- Serve hot with parathas.
